Mushroom & Tofu Gravy with Mashed Potatoes

Hellooo! I promised to share the recipe for this yummy dish from my Instagram stories yesterday. So here it is! It is the perfect mid-week dish and I’m pretty sure that it is very kids-friendly as well.. I mean which kid doesn’t like mashed potatoes? The gravy is usually only made with mushrooms but I decided to also add tofu for some more protein. It actually makes a pretty good combo. Also, I’m very aware that this is more like a winter dish haha, but pregnancy has me craving these types of dishes right now. Now, to the recipe. Hope you enjoy it as much as I did!

Mushroom & Tofu Gravy with Mashed Potatoes 

Makes 2 Servings

Tofu & Mushroom Gravy:

  • 2 tbsp olive oil
  • 1 package mushrooms, sliced (I chose shiitake mushrooms but you can chose mushrooms of your choice)
  • 1 package firm tofu, cubed
  • 1/4 cup flour (I used spelt flour but you can also use all-purpose flour)
  • 2 cups vegetable broth
  • Pinch of sea salt
  • Pinch of black pepper
  • 1 tsp fresh thyme leaves

Mashed Potatoes:

  • 4 Russet Potatoes, peeled and diced
  • 1/4 cup vegan butter
  • 1/2 cup plain plant milk (I chose oat milk)
  • Pinch of sea salt
  • Pinch of black pepper
  • 1/2 tsp garlic powder

 

Directions:

  1. Cook the peeled and diced potatoes in boiling water until easily pierced with a fork. 
  2. Prepare the gravy while the potatoes cook, by heating oil in a skillet over medium heat. Add the mushrooms and tofu, season with sea salt and black pepper and let cook until the liquid is almost gone, about 10 minutes.
  3. Add flour and stir to coat mushrooms and tofu evenly, cook for about 3 minutes.
  4. Slowly pour 1 cup of vegetable, stirring constantly. Then add second cup of broth and reduce heat to simmer and cook for about 15 minutes or until gravy is thick but pourable.
  5. Add fresh thyme and season again with sea salt and black pepper. 
  6. In the meantime the potatoes should be tender and ready to be drained. Place potatoes back to the pot, add vegan butter and milk and use a potato masher to break apart the potatoes. Season with garlic powder, sea salt and pepper and continue to mash until potatoes are smooth. 
  7. Enjoy mashed potatoes with the mushroom & tofu gravy. 🙂
